Simple Plant Based Dinner

I created this delicious dish for my first vegan dinner of 2017, it fills you up and leaves you satisfied all evening.

SALAD: 

  • 2 Cups: Arugula
  • Sliced Cherry Tomatoes
  • Sliced Button Mushrooms
  • Chopped White Onion
  • Chopped Cucumber
  • Chopped Celery
  • 1/2 Cup of Guacamole (I used purely avocado for this with some pepper).

DRESSING:

  • 1/2 Extra Virgin Olive Oil
  • 1/2 Balsamic Vinegar
  • Squeeze of Lemon Juice

MAIN: 

  • 2 Cups of Brown Rice with Soy Sauce
  • Steamed Carrots, Broccoli and Cauliflower.
