Light Lunch Salad

This is an ideal light lunch filled with a variety of veggies and a massive bottle of cucumber/lemon infused water and some clementines on the side. Its addictive, and without the guilt. This meal will leave you feeling satisfied and energized without cravings, for the rest of the day.

SALAD:

  • 1/2 Cup: Raw Pumpkin Seeds
  • 1 Cup: Basmati Rice
  • 2 Cups: Organic Arugula
  • Sliced Cucumber
  • Diced Red Onions
  • Chopped Cauliflower
  • Sliced Red Pepper
  • Sliced Green Pepper

DRESSING:

  • 1/4 Cup Lemon Juice
  • Pinch of salt/pepper
  • 1/4 Cup Balsamic Vinegar
  • 1/2 Cup Extra Virgin Olive Oil

I like to use the Magic Bullet to blend my dressings before tossing it into the salad.
